做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均(jun1 )匀稍收汁时盖(gài )上锅盖焖。
