做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快(kuài )熬(áo )干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖(mèn )。
