做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧(shāo )热(rè ),倒入2勺油(yóu ),放入生(shēng )姜(jiāng )、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
