做法(fǎ ):春笋切成片后(hòu )加少许盐(yán )捞(lāo )出后用清(qīng )水(shuǐ )浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的(de )时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
