做法:春笋切成片后(hòu )加少(shǎo )许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右(yòu )。再(zài )加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干(gàn )的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
