做法:春(chūn )笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽(chōu )、蚝(háo )油翻(fān )炒均匀,加入少量(liàng )清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时(shí )盖上锅盖焖。
