做法:春笋(sǔn )切成片(piàn )后加少许盐(yán )捞(lāo )出后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再(zài )加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
