做(zuò )法:春笋切成片(piàn )后加少(shǎo )许(xǔ )盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加(jiā )入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中(zhōng )火。煮到(dào )水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
