做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生(shēng )姜切(qiē )片,葱切(qiē )成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放(fàng )入(rù )生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
