做法:春笋切(qiē )成片后加(jiā )少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖(gài )大火(huǒ )煮开(kāi )后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
