做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
