做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉(ròu )片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
