做法:春笋切(qiē )成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段(duàn )。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转(zhuǎn )中火(huǒ )。煮到(dào )水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁时盖上锅盖焖。
