做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖(gài )上锅(guō )盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加入(rù )盐,翻炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
