做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
