做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁(zhī )时盖上锅盖焖。
