做(zuò )法:春(chūn )笋切成(chéng )片(piàn )后加少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
