做法(fǎ ):春笋切成片后加(jiā )少许盐捞出后(hòu )用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大(dà )火煮(zhǔ )开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
