做法:春(chūn )笋切成(chéng )片后加少(shǎo )许(xǔ )盐捞出后(hòu )用清(qīng )水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖。
