做法:春笋切成片后加少许(xǔ )盐(yán )捞(lāo )出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖(mèn )。
