做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的时候(hòu )加(jiā )入(rù )盐,翻(fān )炒均匀(yún )稍(shāo )收汁时盖上锅(guō )盖焖。
