做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒(chǎo )1分(fèn )钟(zhōng )左右。再(zài )加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
