做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍(shāo )收汁时盖(gài )上锅盖焖(mèn )。
