做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
