做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右(yòu )。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁(zhī )时盖上锅盖焖。
