做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅(guō )盖焖。
