做法:春笋切成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒(chǎo )均匀稍收汁(zhī )时(shí )盖上锅盖焖。
