做法:春笋切成片(piàn )后加少许(xǔ )盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的(de )时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁(zhī )时盖上(shàng )锅盖(gài )焖。
