做(zuò )法:春笋切成(chéng )片后加少许(xǔ )盐捞出(chū )后用清水浸(jìn )泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖焖(mèn )。
