做(zuò )法:春笋(sǔn )切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的(de )时候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
