做法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
