做法:春笋切成(chéng )片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬(áo )干的时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
