做法:春笋(sǔn )切(qiē )成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大(dà )火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
