做法(fǎ ):春笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅盖(gài )大火煮开后(hòu )转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
