做法:春(chūn )笋切成(chéng )片后加少许盐(yán )捞出后用清(qīng )水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中火。煮到(dào )水快熬干的时候(hòu )加入(rù )盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
