做法:洗净(jìng )宰好鲫鱼(yú ),洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂(liè )一(yī )小块姜,热锅(guō ),用姜(jiāng )块(kuài )在(zài )锅上(shàng )擦一遍,放(fàng )两(liǎng )勺油,待油六成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好的(de )鲫鱼和其他材料,武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即可品尝。
