做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生(shēng )姜、春笋(sǔn )、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅(guō )盖焖。
