做法:春(chūn )笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖(gài )上锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
