做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁(zhī )时盖上(shàng )锅(guō )盖焖。
