做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出(chū )后用清水浸(jìn )泡(pào ),生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
