做法:春笋切(qiē )成(chéng )片后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到(dào )水快熬干的(de )时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
