做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上(shàng )锅(guō )盖大火(huǒ )煮开(kāi )后转中(zhōng )火。煮到水快熬干(gàn )的(de )时候加入(rù )盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
