做法:春笋切(qiē )成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火。煮(zhǔ )到水(shuǐ )快(kuài )熬(áo )干的时候加入盐,翻炒均匀(yún )稍收汁时(shí )盖上锅(guō )盖焖。
