做法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到水(shuǐ )快熬干的(de )时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
