做法:春笋切(qiē )成片后加(jiā )少(shǎo )许盐捞(lāo )出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
