做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖(gài )上锅(guō )盖大火煮(zhǔ )开后(hòu )转中火(huǒ )。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
