做法:春笋切(qiē )成片后加少许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均(jun1 )匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
