做(zuò )法(fǎ ):春(chūn )笋切成片(piàn )后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
