做法:春笋切成片(piàn )后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖(gài )大(dà )火煮开(kāi )后(hòu )转中火。煮到(dào )水快熬(áo )干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖焖。
