做(zuò )法:春笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻(fān )炒均匀稍收汁时(shí )盖上锅(guō )盖(gài )焖。
